A FRESH START

HELLO and welcome to shivanilovesfood.com! This is my new food blog which will soon be filled with many easy and delicious vegetarian and vegan recipes. Yay!

Okay, let's share the first recipe!

Going with the "Fresh Start" theme, I am sharing a recipe for a healthy and VEGAN protein-packed blueberry smoothie bowl. It is an incredibly easy breakfast to make and looks gorgeous. 



Blueberry Smoothie Bowl Recipe
Just look at that colour! 

Smoothies are a great way to start the day as you can add whatever you like to them. I normally add: 

  • Fresh/Frozen Fruit (depending on what's in the fridge!) 
  • Fruit juice/coconut water
  • Sometimes I add oats/nuts/chia seeds for extra protein. 
BLUEBERRY SMOOTHIE BOWL:

Serves: 1
Time: 5 minutes 

You will need:
  • 2 handfuls frozen blueberries, plus a few extra for decoration
  • 1-2 tbsp oats 
  • A small handful of almonds
  • 50ml coconut water (you may need more/less depending on your desired consistency) 
  • Splash of vanilla (optional but completely reccomended!) 
  • 1 teaspoon roasted pumpkin seeds 
Method:


1.Add all ingredients to a blender, reserving a few blueberries and the pumpkin seeds for decoration. 
2. Blend until smooth. There really isn't very much effort required to make a smoothie. However making them yourself is a lot cheaper than buying ready made versions and you can customise them with your favourite ingredients. That's what I call a win-win!
3. Pour the smoothie into your favourite bowl or glass.
4. Top with the reserved pumpkin seeds and blueberries. Enjoy!
