HUMMUS + PITA CHIPS

Any hummus fans out there? Personally I love anything with chickpeas in! 

Hummus is actually very easy to make and can be an impressive looking dip for party guests and friends. Plus it chickpeas are good source of protein with 19g per 100g, which is 3 times the protein in an egg! 

Hummus is very versatile and can be used in wraps, toasties and also as a dip with sliced veggies. My favourite thing to dip in hummus is Pita Chips, which are essentially crunchy nuggets of seasoned pita bread. Pita chips are hard to find in the shops but you can make them at home in just a few minutes. YAY!



HUMMUS AND PITA CHIPS:

Time: 20 minutes 

You will need:

For the pita chips:
  • 6 brown pita breads 
  • 2 tablespoons sunflower oil 
  • Salt and pepper to taste 
For the hummus:
  • 1 can chickpeas, drained and washed 
  • 1 clove garlic 
  • 3-4 tablespoons olive oil 
  • 1 tablespoon sesame seeds 
  • A pinch of chilli flakes 
  • Squeeze of lemon juice 
  • Salt and pepper to taste 
Method:
  • Rip the pita bread into small pieces and arrange them in a flat layer on two baking trays. 
  • Drizzle with oil and sprinkle with salt and pepper. Toss to coat evenly
  • Bake the pita in a preheated oven at 180 degrees for 15-20 minutes until golden. (Tip: Keep an eye on them - you will know when they are done as the pita chips will be hard and crisp) 
  • Meanwhile, in a food processor blend all the hummus ingredients until smooth. Add more/less oil depending on your desired consistency. 
  • Remove the pita chips from the oven and serve with the hummus. You could also serve this with chopped carrots and sliced red peppers.
